Brazilian Cheese Buns

Steps

  1. Preheat the oven to 375°F / 190°C. Line two baking sheets with parchment paper.
  2. Bring 115g of unsalted butter, 55g of water, 55g of milk, and ¾ teaspoon of table salt to a boil.
  3. Pour over 225g of tapioca flour in a mixing bowl. Beat with an electric mixer until smooth and elastic.
  4. Beat in 2 teaspoons of minced garlic and 85g of finely grated Parmesan. Let cool until warm, then gradually beat in 2 beaten eggs.
  5. If too loose to hold a scoop, beat in a little more tapioca flour. Scoop 2-tablespoon mounds onto the baking sheets, leaving 1½in / 4cm gaps.
  6. Bake for about 20 minutes, until lightly golden. Serve warm.
