Steps
- Mix 2¾ cups of all-purpose flour, ⅓ cup of granulated sugar, ¾ teaspoon of table salt, 1 tablespoon of baking powder, and 1 teaspoon of ground cinnamon.
- Rub in ½ cup of cold cubed unsalted butter until unevenly crumbly. Stir in ¾ cup of peeled apple cut into ½in / 1cm pieces and ¾ cup of cinnamon baking chips.
- Whisk 2 large eggs, 1 teaspoon of vanilla extract, and ½ cup of unsweetened applesauce. Stir into the dry ingredients just until the dough holds together.
- Divide in half on a floured, parchment-lined baking sheet. Pat each half into a 5in / 13cm circle about ¾in / 2cm thick.
- Mix 3 tablespoons of coarse sugar and ½ teaspoon of ground cinnamon. Brush the dough with 1 tablespoon of water and sprinkle with the topping.
- Cut each circle into 6 wedges with a wet knife. Separate the outer edges by ½in / 1cm. Freeze uncovered for 30 minutes.
- Meanwhile, preheat the oven to 425°F / 220°C. Bake for 18-22 minutes, until golden and the sides look baked through when separated. Cool briefly on the sheet.
