Austrian Fried Apple Rings

Steps

  1. Whisk 2 large eggs, 2 teaspoons of granulated sugar, and ⅛ teaspoon of salt with half of 90ml of whole milk. Beat in 100g of all-purpose flour until smooth, then gradually whisk in the remaining milk.
  2. Peel and core 2 firm Granny Smith apples; slice into ¼in / 0.5cm rings. Heat 3 tablespoons of ghee in a large skillet over medium heat.
  3. Dip each ring in batter, let the excess drip off, and add in batches. Cover, reduce to medium-low, and cook until golden underneath and the apples soften. Turn and cook until golden on the other side.
  4. Drain on paper towels and dust with icing sugar.
