Steps

  1. Rinse 450g of salted cod and soak in cold water for 30 minutes. Drain, cover with fresh water in a pot, and bring to a boil. Simmer for 20 minutes, then drain.
  2. Let the fish cool, remove any bones, and flake. Whisk 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 2 cups of warm water into a thin batter.
  3. Stir in 1 tablespoon of prepared sofrito, 2 teaspoons of sazón seasoning, 2 grated garlic cloves, and 2 tablespoons of minced cilantro.
  4. Add ½ diced green bell pepper, ½ diced yellow onion, ½ teaspoon of black pepper, ½ teaspoon of dried oregano, and the cod. Thin with a little water if needed.
  5. Heat 2in / 5cm of vegetable oil to 350°F / 175°C. Fry roughly ¼-cup portions in batches, turning, until thin, crisp, and golden on both sides. Drain on paper towels.
