Steps
- Preheat the oven to 400°F / 205°C with a rack in the center. Line a baking sheet with parchment.
- Mix 2 cups of all-purpose flour, ½ teaspoon of table salt, 1 tablespoon of baking powder, and 2 teaspoons of granulated sugar.
- Rub in 4 tablespoons of cold cubed unsalted butter until unevenly crumbly, leaving some larger butter pieces.
- Stir in 1 cup of coarsely grated cheddar, ⅓ cup of finely snipped fresh chives, and 1 cup of cooked, cooled, crumbled bacon.
- Add ¾ cup plus 2 tablespoons of heavy cream and mix until cohesive, adding a little more cream if dry crumbs remain.
- Pat into a 7in / 18cm circle about 1in / 2.5cm thick on the baking sheet. Cut into 8 wedges and separate slightly.
- Brush with 1 tablespoon of heavy cream. Bake for 20-22 minutes, until golden brown. Cool on the sheet.
