Steps

  1. Cover 1 cup of dried peeled split fava beans with cool water and soak for 1 hour. Drain and rinse.
  2. Put the beans, 1 small quartered onion, 3 garlic cloves, ½ cup of chopped fresh parsley, ½ cup of chopped fresh cilantro, and ¼ cup of chopped fresh dill in a pot.
  3. Add 1 teaspoon of ground cumin, 1 teaspoon of dried mint, 1 teaspoon of salt, and 2½ cups of water. Bring to a boil over medium-high heat, then simmer over low heat until the beans mash easily, adding more water as needed.
  4. Blend smooth with an immersion blender. Simmer gently, stirring, until thick and scoopable; season with cumin, salt, and pepper.
  5. Heat ¼ cup of olive oil in a skillet over medium heat. Fry 1 medium chopped onion, stirring, until golden brown, then spoon over the dip.
