Steps

  1. Preheat the oven to 350°F / 180°C. Soak 2 slices of white bread in cold water.
  2. Cook 2 chopped onions in 25g of butter over medium heat for 10 minutes, until soft and lightly colored. Add 2 crushed garlic cloves and 1kg of lean ground beef; break up and cook until browned.
  3. Stir in 2 tablespoons of Madras curry paste, 1 teaspoon of dried mixed herbs, 3 cloves, 5 allspice berries, 2 tablespoons of mango chutney, and 3 tablespoons of golden raisins.
  4. Add two of 6 bay leaves and season with salt and pepper. Cover and simmer for 10 minutes. Squeeze the bread dry and beat into the beef mixture.
  5. Press into a 9 × 13in / 23 × 33cm oval baking dish at least 2in / 5cm deep. Beat 300ml of whole milk with 2 large eggs, salt, and pepper; pour over the meat.
  6. Top with the remaining bay leaves and bake for 35-40 minutes, until the topping is set and golden and the center reaches 160°F / 71°C.
