Steps

  1. Whisk 1 egg, 1 tablespoon of softened unsalted butter, ⅓ cup of sugar, and ½ teaspoon of kosher salt until smooth.
  2. Stir in 2 cups of all-purpose flour, 2 teaspoons of baking powder, and ½ cup of whole milk to make a thick cohesive batter.
  3. Heat 3in / 7.5cm of vegetable oil in a heavy pot to 360°F / 182°C. Use two spoons to drop roughly 1-tablespoon portions into the oil in small batches.
  4. Fry for 3-4 minutes, turning occasionally, until golden and cooked through. Drain on paper towels and dust with cinnamon and sugar while hot.
