Steps

  1. Mix 200g of ground almonds, 200g of granulated sugar, 1 teaspoon of cinnamon, 100g of grated dark chocolate, 80g of cocoa powder, and 1 pinch of salt.
  2. Beat 3 egg whites to stiff peaks. Fold in the dry mixture and 30ml of kirsch. Divide into 2 disks, wrap, and refrigerate for at least 1 hour.
  3. Preheat the oven to 350°F / 180°C. Roll the dough on granulated sugar to ½in / 1cm thick and cut into stars.
  4. Transfer to parchment-lined baking sheets. Bake for 8 minutes, until the surfaces are set but the centers remain soft. Cool on the sheets.
