Steps
- Mix ¾ cup of lukewarm milk, 2 tablespoons of softened unsalted butter, ½ cup of raisins, ½ cup of rolled oats, and ¼ cup of packed light brown sugar.
- Add 1¼ teaspoons of salt, 1 teaspoon of ground cinnamon, 2½ teaspoons of instant yeast, ¼ cup of lukewarm water, and 3 cups of all-purpose flour. Knead until smooth and soft.
- Cover in a greased bowl and rise for about 2 hours, until puffy. Shape into a log and place in a greased 8½ × 4½in / 22 × 11cm loaf pan.
- Cover and rise for 1½-2 hours, until crowned 1-1½in / 2.5-4cm above the rim. Near the end, preheat the oven to 350°F / 175°C.
- Brush with water and sprinkle with cinnamon sugar. Bake for 40-45 minutes, tenting with foil if needed, until deep golden and 190°F / 88°C inside.
- Cool in the pan for 5 minutes, then turn out onto a rack to cool completely.
