Steps
- Mix 680g of ground beef with 15% fat, 2 teaspoons of soy sauce, 1 teaspoon of onion powder, and 1 teaspoon of tomato paste.
- Add ¾ teaspoon of salt and ¾ teaspoon of black pepper. Form 4 patties 4in / 10cm wide and ¾in / 2cm thick, with a shallow dent in each center.
- Bring water to a boil in a covered Dutch oven over medium-high heat, keeping it below a steamer basket. Arrange the patties in the basket and cover.
- Steam for about 8 minutes, until the beef reaches 160°F / 71°C. Remove from the heat, add 1 cup of shredded sharp cheddar, cover, and rest for 2 minutes.
- Split 4 hamburger buns. Put the tops on the patties and stack the bottoms cut-side up above them. Cover for 30 seconds, then assemble the burgers.
