Bermudian Sweet Potato Pudding

Steps

  1. Preheat the oven to 325°F / 165°C. Grease a 9 × 13in / 23 × 33cm baking dish.
  2. Cream ½ cup of softened unsalted butter and ½ cup of sugar with 1 teaspoon of ground nutmeg, 1 teaspoon of ground cinnamon, ¼ teaspoon of ground cloves, and 1 teaspoon of salt.
  3. Beat in 3 eggs. Mix in 4 cups of grated peeled raw sweet potato, 2 cups of evaporated milk, and 1 cup of light corn syrup.
  4. Pour into the dish. Bake for 2 hours; when a crust forms underneath and around the edges, stir well, then continue baking until set and browned.
