Steps
- Preheat the oven to 425°F / 220°C. Grease two 12in / 30cm pizza pans.
- Mix 2 cups of self-rising flour, 2 tablespoons of olive oil, and ¼ cup plus 2 tablespoons of water into a firm dough. Add a little more water only if needed to bring it together.
- Divide in half. Roll each piece between lightly greased sheets of parchment to ⅛in / 3mm thick or thinner. Transfer to the pans.
- Spread ⅔ cup of pizza sauce evenly between the two crusts. Mix 1 cup of shredded sharp white cheddar, ½ cup of shredded smoked provolone, and ½ cup of shredded Swiss cheese; divide between the pizzas.
- Sprinkle with dried Italian herbs. Bake for 9-11 minutes, until the cheese begins to brown and the crust is golden underneath. Cool briefly on a rack, then cut into squares.
