Cut the white core out of ½ lime, chop the lime into chunks, and muddle them in a rocks glass.
Add 60ml of vodka and 1 teaspoon of honey and stir until the honey dissolves. Add 10ml of demerara syrup, fill the glass with crushed ice, and garnish with a honey dipper.
