Mix 1 cup of lukewarm water, 2 tablespoons of white sugar, 2 teaspoons of dry yeast, ½ teaspoon of kosher salt, and 1 tablespoon of vegetable oil. Stir in 2 cups of all-purpose flour to a sticky dough.
Cover and leave to rise for 1 hour, until doubled. Knead briefly to knock out the air, cover and rest for 10-20 minutes.
Mix ½ cup of brown sugar, 1 teaspoon of cinnamon, and 2 tablespoons of chopped walnuts.
Using ½ cup of all-purpose flour for dusting as needed, divide the dough into 8 balls. Flatten each, fill with the sugar mixture and pinch the edges to seal.
Cook sealed side down in a lightly oiled nonstick pan over medium heat for about 1 minute. Flip and press into a thin round with a spatula.
Cook for about 1 minute more, then cover, lower the heat and cook for 1 minute, until the filling melts.
