Mix 1 cup of whole wheat flour, ¼ cup of chickpea flour (besan), ¼ cup of pearl millet flour (bajra), and ¼ cup of sorghum flour (jowar).
Add ½ teaspoon of red chili powder, ½ teaspoon of turmeric, ½ teaspoon of ground cumin, ½ teaspoon of ground coriander, ¾ teaspoon of salt, and 1 tablespoon of oil. Mix well.
Add 1 tightly packed cup of fresh fenugreek leaves (methi), chopped, 1 piece of ginger, 1in / 2.5cm long, grated, ½ teaspoon of chopped green chilies, and 4 tablespoons of plain yogurt. Knead into a dough without adding water.
Divide into 11 balls. Dust each with flour and roll it into a 7-8in / 18-20cm round.
Cook on a hot griddle, flipping and brushing both sides with a little oil, until golden on both sides.
