Mix 1 cup of whole wheat flour (atta), ⅛ teaspoon of salt, and ¾ teaspoon of oil. Gradually add ¼ cup of water, plus a little more only if needed, to make a stiff, tight dough.
Knead lightly, cover, and rest briefly. Divide into 8 balls and roll each into a round that is not too thin.
Heat 2in / 5cm of oil in a deep pan until a small piece of dough dropped in rises at once without browning.
Slide in one puri at a time and press it gently with a slotted spoon until it puffs. Flip and fry until golden and crisp.
