Steps

  1. Preheat the oven to 350°F / 180°C. Line an 8 × 12in / 20 × 30cm roasting pan with parchment, covering its base and sides.
  2. Fry 2 sliced low-fat pork sausages and 4 chopped lean bacon slices in a nonstick skillet over medium heat until golden and the sausage reaches 160°F / 71°C. Transfer to the pan.
  3. Fry 150g of halved button mushrooms in the same skillet for about 5 minutes, until golden. Add to the roasting pan.
  4. Whisk 8 egg whites with 3 tablespoons of milk, salt, and pepper. Pour into the pan and scatter 140g of halved cherry tomatoes over the top.
  5. Bake for 20-25 minutes, until set. Meanwhile, heat 800g of reduced-salt reduced-sugar baked beans with 1½ teaspoons of smoked paprika in a saucepan over low heat.
  6. Scatter chopped chives over the frittata and cut into pieces. Spoon the warm beans alongside.
