Steps

  1. Whisk 1 cup of yellow cornmeal, 1 cup of all-purpose flour, 1 tablespoon of baking powder, ½ teaspoon of granulated sugar, and 1½ teaspoons of table salt.
  2. Whisk in 1 large egg. Slowly whisk in 1¾ cups of boiling water, adding a little more if needed for a moderately thick batter that holds on a spoon.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat until shimmering. Add heaping tablespoonfuls of batter and gently spread into 3in / 8cm rounds.
  4. Cook for about 2 minutes per side, until golden. Repeat in batches, adding a little more oil as needed.
