Hutspot with Smoked Sausage

Steps

  1. Put 1.125kg of peeled chopped starchy potatoes, 3 cups of chopped onion, and 8 cups of peeled carrot strips in a large pot.
  2. Add 6 cups of water and 1 beef stock cube. Bring to a boil and cook for 20 minutes, until the potatoes are fork-tender.
  3. Meanwhile, heat 450g of smoked kielbasa according to its package instructions.
  4. Drain the vegetables, then shake the pot over low heat for 10 seconds to dry them. Mash with a potato masher.
  5. Warm 1 cup of milk until steaming. Stir into the mash with ¼ cup plus 2 tablespoons of unsalted butter and ½ teaspoon of ground nutmeg. Add the hot sausage.
