Steps
- Rinse 450g of salted cod and soak in water for at least 8 hours. Drain, cover with fresh water, and boil for 5-8 minutes. Drain, cool, remove any skin and bones, and flake.
- Mix with 2 cups of all-purpose flour, 1 small finely chopped tomato, 1 finely chopped scallion, and ½ seeded finely chopped Scotch bonnet pepper.
- Add ½ teaspoon of dried thyme and ¼ teaspoon of black pepper. Gradually mix in 1½ cups of water to make a soft batter that drops from a spoon rather than pours.
- Heat ¼ cup of vegetable oil in a large skillet over medium-low heat. Add 2-tablespoon portions in batches and fry for about 3 minutes per side, until golden and cooked through. Drain on paper towels.
