Lyonnaise New Potatoes

Steps

  1. Melt 50g of unsalted butter in a large skillet over medium-low heat. Measure 4 tablespoons of olive oil and add half with 3 large sliced Spanish onions. Cook for 30 minutes, until soft and golden.
  2. Stir in 2 sliced garlic cloves and 1 tablespoon of thyme leaves. Season with salt and pepper, then set aside.
  3. Preheat the oven to 400°F / 200°C. Boil 1kg of halved large new potatoes in salted water for 5 minutes, then drain well.
  4. Toss the potatoes with the remaining oil in a roasting pan and season with salt and pepper. Roast for 30 minutes, turning halfway, until golden.
  5. Stir in the onions and roast for 10 minutes more, until hot throughout.
