30 minutes

Minty Salmon & Broccoli Frittata

Steps

  1. Boil 500g of new potatoes in water for 10-12 minutes. Add the florets from 1 small head of broccoli for the final 4 minutes, then drain when tender.
  2. Put 2 skinless salmon fillets in a microwave-safe dish with 1 tablespoon of water. Cover with a vented microwave-safe lid and microwave on high for about 2½ minutes, until flaky and 145°F / 63°C.
  3. Heat the broiler to high. Slice the potatoes thickly and fry in 1 tablespoon of olive oil in a deep 12in / 30cm broiler-safe skillet over high heat, until golden at the edges.
  4. Flake the salmon into large pieces and arrange among the potatoes with the broccoli. Beat 8 eggs with 1 small handful of finely chopped mint, salt, and pepper.
  5. Pour the eggs into the skillet and cook over low heat for 6 minutes, until the edges set. Broil until the center is set and the surface golden, then cut into wedges.
