Steps
- Mix 450g of bread flour, 5g of instant yeast, 1 teaspoon of sugar, and 1½ teaspoons of salt. Add 300ml of lukewarm water and 2 teaspoons of olive oil.
- Knead for 10 minutes, until smooth and elastic. Place in a lightly oiled bowl, cover, and rise for 2 hours, until doubled.
- Line an 8½in / 22cm round cake pan with parchment and dust with fine cornmeal. Roll the dough on a floured, cornmeal-dusted surface into a 14 × 18in / 35 × 45cm rectangle.
- Spread with 175g of pizza sauce and add 100g of grated mozzarella, 75g of sliced pepperoni, and 1 small bunch of chopped basil. Roll tightly from a long edge.
- Cut into eight equal pieces and arrange cut-side up in the pan. Cover loosely and rise for 30 minutes, until puffy; preheat the oven to 400°F / 200°C.
- Bake for 30-35 minutes, until golden with melted cheese. Cool for 5 minutes.
