Steps
- Mix 425g of farmer cheese, 4 large eggs, ¾ cup of all-purpose flour, 3 tablespoons of sugar, and ½ teaspoon of salt.
- Stir 1 teaspoon of baking soda with 1 teaspoon of white vinegar, then add to the cheese mixture. Beat until evenly combined and fold in 1 cup of raisins.
- Heat 2 tablespoons of extra-light olive oil in a nonstick skillet over medium heat. Scoop heaping tablespoonfuls of batter into flour, coat lightly, and gently pat off excess with floured hands.
- Fry in batches for 3-4 minutes per side, until golden and cooked through, adding more oil as needed.
