Steps
- Reserve two berries from 250g of hulled strawberries; halve any large remaining berries. Cook with 100ml of water and 25g of superfine sugar over medium heat for about 3 minutes, until soft.
- Remove from the heat, mash, and stir in 140g of mini marshmallows until melted. Let cool.
- Whip 200ml of heavy cream until it holds its shape, then fold into the strawberry mixture. Spoon into dessert glasses and chill for 2 hours, until set; top with the reserved halved berries.
