Steps
- In a mixer bowl, combine 2 cups of all-purpose flour, ½ teaspoon of kosher salt, and ¼ teaspoon of baking powder.
- Add ¼ cup of water, ¼ cup of vegetable oil, ¼ cup of whole milk, and 1 tablespoon of light brown sugar. Knead with the dough hook on medium for 5-7 minutes, until smooth.
- Flatten into a disc, wrap, and chill for 30 minutes. Knead on a floured surface for 2-3 minutes, until elastic.
- Roll to 12 × 15in / 30 × 38cm, about ⅛in / 3mm thick. Cut lengthwise into 12 strips, each 1in / 2.5cm wide.
- Cut 350g of semi-hard white frying cheese into 12 sticks. Wrap each in a dough strip, overlapping the spiral and sealing both ends completely.
- Heat 2in / 5cm of vegetable oil to 350°F / 175°C over medium heat. Fry 2-3 sticks at a time, turning until golden on all sides. Drain on paper towels.
