Steps

  1. Preheat the oven to 350°F / 180°C. Line the base of an 11in / 28cm springform pan with parchment. Line the base and sides with half of 540g of puff pastry; chill.
  2. Melt 1 tablespoon of butter in a skillet over medium heat. Soften 300g of chopped onions and 300g of sliced leeks for 7 minutes. Season with salt, pepper, and nutmeg; cool.
  3. Fry 300g of sliced bacon in the same pan until lightly crisp, then cool.
  4. Prepare 250g of cored thinly sliced apples, 250g of cored thinly sliced pears, 700g of grated raclette cheese, and 800g of thinly sliced boiled potatoes.
  5. Layer apples, cheese, potatoes, onions and leeks, bacon, then pears in the pastry. Repeat until the filling is used, seasoning lightly between layers.
  6. Roll the remaining pastry over the filling and seal the edges. Beat 1 egg with 1 pinch of salt and brush over the lid.
  7. Bake for 30-40 minutes, until the pastry is golden and the filling is hot.
