Steps
- Put 2½ peeled cored diced Granny Smith apples, 1 teaspoon of ground cinnamon, and 1 tablespoon of water in a saucepan over medium-low heat. Bring to a simmer, cover, and cook over low heat for 8-10 minutes, until tender.
- Whisk 1 egg, ½ cup of reduced-fat milk, ¾ cup of whole-wheat all-purpose flour, and half of 2 tablespoons of honey until smooth.
- Lightly spray a large nonstick skillet with olive oil and heat over medium-high heat. Swirl ½ cup of batter into a thin layer.
- Cook for 1-2 minutes, until bubbles appear, then flip and cook for 1-2 minutes. Repeat with the remaining batter.
- Top with the apples, ¼ cup of reduced-fat Greek yogurt, and the remaining honey.
